Halal barbecue is becoming one of the liveliest expressions of Texas food culture—but its roots run deeper than any passing restaurant trend. Muslim pitmasters across the state are working within the old Texas vocabulary of smoke, fire, beef and patience while bringing influences from Iraqi, Levantine, Pakistani and other culinary traditions to the pit. The result is not barbecue made adjacent to Texas tradition; it is Texas barbecue, shaped by another generation of Texans claiming the form as their own.
